I've heard occasionally that it's possible to edit the intervals at which SnapToGrid "snaps".
Is it? How?

It's CTRL-SHIFT-B.
You know, CTRL-SHIFT-B, cause B stands for ... grid ... snap ... uh ... whatever.
You have to have one of your items in edit mode to get the window to pop up.

B stands for "BOOP!", the sound the prim makes when it snaps to the grid. (Ok, so that's just my mnemonic.)

The Grid Options dialog can also produced from the Tools menu. There is a command right above it on the menu I don't hear much mention of, the Shift Object XY To Grid command, with a keystroke of Shift-X. This can be a very useful command; with snap to grid on, and a bunch of objects near a grid intersection that one would like horizontally centered with each other, one can select them all and do a Snap XY and they are all nice and centered.

shift-X is wonderful, I've used it since the moment it was added. Just wish there was a shift-Z to snap to grid in X, Y, and Z too.
And the Grid Unit setting I always use is 0.125 wich works great for building.
