yesterday I heard a woman talking and she was speaking in well written paragraphs and I know she didn't type them up at the moment. I noticed that some of her sentences began with /me. How do you do this? also when someone was doing an action you didn't see this screenname:_______ but instead you saw April Frog greeted him and _______ there was no : in the phrase. How do you do that also? Thanks a lot for your time! I appreciate it.

You've almost answered your own question.

If I type:
/me waves her hands

It will appear in chat as:
Kelli May waves her hands

As for someone creating large chunks of well-written chat... I'd guess either they're a quick & accurate typist, or they're writing it offline in something like Notepad, then copy & pasting it into chat.

Or for the paragraphs that you see scrolling in the text could be gestures.

Like Kelli, I would say that she had the large chunks pre-written and saved on a notecard or in a text file opened in notepad. Then she can highlight, copy and paste. The lines where you saw "/me' where where she highlighted an extra space or line when she copied it. The "/me" has to be at the start of the line of chat.
