I hear around about SIM estate owners who install automatic SIM restart scripts that enable the SIM to retart everyday. Whats the reason behind this and is it safe? Is this something acceptable by Linden?

Is it possible to restart a sim by script? I didn't think so, unless you mean they've got a bot doing it for them.
For whatever reason, restarting the sim can help with a lot of problems, such as ghost prims and the ghost script bug described at http://jira.secondlife.com/browse/SVC-3867 |

I think it'd have to be a bot.
A daily reboot seems excessive but yes, a freshly-booted sim is usually happier than one that's been running for a long time. _____________________

It has to be a bot, there is no script that you can setup to reboot a sim and even making one to do so would not work. the estate tools and a few land options are not scriptable. linden labs purposely did that so the grifers could not exploit it.
