Is there any way to bind a keyboard key (Like F1, F2, etc) to automatically equip some item from your inventory when pressed?

Yes I am sure there is, I think I can draw a sword using shortcut keys, but I don't know how, you could ask on the Script Tips forum.

AFAIK, you can't attach from inventory using a shortcut. Some items give the illusion you can, but they remain attached but invisible, and become visible on a voice command, usually with the appropriate animation (like drawing a sword). You can map any voice command to a shortcut as a gesture.

I've equipped items in WoW, but I've only ever attached them in SL...
