It will delete it in yours but not from theres. They will not see that you deleted them as a friend, but they will continue to see when you're online unless you check the correct box on the viewer so that they don't see.

Bit if you are really worried about it, which most of us are not, you will need to leave any open enrollment groups you are in also. To see if someone is online all you need to do is join a group that they are in and it will show their online status in the members list. This does not apply to all groups, just most of them.

And if you own land in SL and are there a lot, all anyone has to do is call up the map and look for the green dot.

EDIT: and furthermore..... If build/script is enabled with return objects disabled on any land within 96 meters of the spot you log into then someone can tell when you log in. Starting to get the idea? If they are giving you problems then add them to the ban list on your land and mute them then get on with your life. If they continue to give you problems then AR them. If you want to hide certain activities from a partner(which happens a lot in SL) then there really is no safe way to do it.

Calling cards and your friends list work independently. A calling card is sort of like a business card in your inventory. You can click on it and pull up someone's profile quickly. Deleting their card in your inventory does not change their friendship status with you. You have to do that from the friends list. You receive a calling card automatically when you accept friendship with someone and yours is given to them in reverse. You can also give your calling card to someone without adding them to your friends list (or them to yours).

You can remove someone from your friends list which is permanent. Or from your friends list, you can uncheck "can see my online status" which hides from them. This can be a little awkward if you come across them in SL and they see you there but you don't show up online for them. Also, if they belong to any of the same Groups you belong to, they can still see your online status. You can also uncheck "can find me on the world map" which means they can't find you in-world but can still see if you are online.
