I know I'm missing a step in the process, but i can't remember it now X_X
I've installed the Office Japanese Language pack, and installed some japanese unicode fonts. I can see the fonts in the browser and can see them in Word, but they're still coming up as ***** in Second Life.

In control panel: "Regional and Language Options" Languages tab. Check the box for "Install files for East Asian Languages" Click Apply, then OK It'll prompt to reboot your computer.
