Begin with something like Fraps http://www.fraps.com to capture the video. Then you need an editing program to do cut scenes, fades, add music track, etc. Then practice, practice practice?

I personally use fraps to record, only because it takes full uncompressed frames.
Then I use a combo of Sony Vegas and Adobe After Effects to edit. Then I render everything together in Vegas, usualy in avi with divx. I find it gives the best quality/size ratio. |

I found the free video recorder at http://camstudio.org/ to be nice enough for the price.
