How do I get my avatar to have eyes? I've just got whites.
And how do I get rid of my hair?!

Are you going for a completely bald look? You may also need to remove "prim hair" from some avatars: right click and see if your hair gives a "detach" option -- and do so. If you don't get that option, or still see hair after detaching, you can use the "default transparent texture in your inventories "Library" folder to clean up the last of it. Simply go into appearance and select "hair," then drag the texture from your inventory onto the little texture box. Mari

I think she may be talking about the default hair. Go in to appearance by right clicking on your avator and choose appearance for the pie menu. In the appearance window, selet hair then style. Move all the sliders left to zero. This will make you bald or near bald. You attach your prim hair.Save your changes and exit appearance. You should also have gotten a bald base with your hair that will remove any default hair showing. You can play with all the different settings in appearance to change the look of your avatar. Name and save the ones you like so you can use them anytime. Play and have fun

As far as eyes, it is kind of weird they are all white if you didn't adjust them in any way.
In addition to using the slider is Edit - Appearance, you can also go to the Library folder in your Inventory. Look for the various avatar folders. Each one (or at least some) have eyes in them. Just click and wear.
Another option is to go to The Free Dove or NCI and find the freebie eyes there.

Also check the Library/Clothing folders. Those have complete avatars, with new hair, eyes, etc.
About hair: There is System hair, which is made from the avatar mesh, just like your Shape. That is the hair that you can edit in Edit Appearance, with color, shape, style. You can also make yourself completely bald using the Appearance Sliders.
The vast majority of people that you'll see in Second Life will be wearing what's called "prim hair." This is hair that you must attach to your avatar, usually the skull (duh, hehe) along with a "bald" hair cap. These "baldies" are just edited versions of the Appearance sliders that allow for the pretty prim hair to show up without the system hair poking through.
Note that many men's skins (a skin is the layer that covers your avatar's shape, much like an orange peel covers the shape of the orange. The wedges make the orange round, but the peel gives it color and shading.) have hair painted onto them, to make it look very short. With these skins, you can't ever get a smooth, completely bald look if that's what you're going for.
