The other day I was following a group IM conversation. Someone in the group but not in the conversation started.... splorging?, filling the IM history with gibberish. They thought it was funny.
If I have someone muted, will I still see their group IM entries? Or are they Completely muted?

Sadly, Muting doesn't mute the group chat of the person muted. Not sure why this is so.

Group Rules often require members to limit group IMs to specific topics related to the group itself. Check your rules and if the person is violating IM protocols then let an officer now and they should handle it.

Last time I tried it, it did not mute the annoying one inside group messages. Maybe it was just one of the usual SL glitches for you, although this time in your favour?
