I was wondering and im sure there is a big fat chance that they don't, but i was wondering do the Lindens keep copies of all of our transactions we make from the time we start secondlife. If not I would imagine it would aid in loss inventories and such, me personally i have lost countless numbers of items that were of course copy and cannot be replaced due to the copy permissions.
So my question is do they have these copies and are they accessible, because me being the dumb noob i was didn't know it was a good thing to keep track of transactions.

They might or might not keep all history depending on whether or not they could foresee any reason that THEY might need it. I'm not sure I can see a good reason for it. Given the number of accounts and the number of transactions, that could entail a lot of storage space.
Even if they do, they will not go back and retrieve anything for you. If you did not download it before the time it was not longer available online, you are out of luck.
