Technically speaking in correct heraldry, you can't do it. You shouldn't have two adjacent "metals" (or and argent) or two adjacent "colours" (anything else except or and argent). You'll have to substitute one of those metals for a colour. Or you could swap the black with one of the metals.

I also believe the proper heraldic term for a ferret is "marten" :-D

Take it up with the SCA, I found it on their website.

Of course I would pick Sable and Argent. Heraldry is mostly punning with style, after all.

In Britain I failed to find any mention of this animal (as a charge) in either Papworth or Burke.

However, Fox-Davies came to the rescue. He says:

The Ermine, the Stoat, and the Weasel &c., are not very often met with, but the Ermine appears as the Crest of Crawford and the Marten as the Crest of a family of that name (Marten).

I am not sure about his second reference, as Burke gives a family by the name of Marten, but in its Crest is a Martin (the bird) holding something in its beak. So the Crawford reference was the only certain one I could find for you, and only on the Crest, not on the Shield.

Of course, Australia had its own College of Arms, of which I am not familiar, so I cannot advise on that source.

You can, of course, apply for your own Coat of Arms, and have whatever charge on the Shield you like.

A Ferret would be a first!

MARTEN (Weasel, Kuna): Martens are larger, heavier-bodied animals than weasels, with thick fur and bushy tails and were valued for their fur. In heraldry, however, there is usually no differentiation between it and the weasel. An ancient emblem of Slavonia, the kuna, is similar to a ferret or mink, and was traded as a pelt in Roman times. They are known for their boldness and their tendency to attack and defeat animals much larger than themselves. Therefore they have become symbols of spiritual warriors who, in spite of their physical weakness, are able to defeat the Devil. It is said that they denote fickleness and inconstancy, but also parental love, vigilance, and watchfulness; a symbol of the hunt; a worthy adversary of distinction, and the symbol borne by those affirming that duty hath no place for fear; sometimes called the marten-cat.
