When I think I have it figured out, one ends up in a different place after I'm done editing. What's the trick to getting them in a specific order?

you can just number them at the begining of each Name line.

You can use unicode characters. if you can find a chart online (can't post any links on these forums, it's against the rules)... U+E000 to U+F8FF (the "Private Use" section) all shows up as a little black square on the profile pick tabs.. Allowing you to order them, without LOOKING like you're ordering them.
It was Marianne McCann's suggestion in another thread. Check out her profile picks, it really does look nice and sharp.
If you're looking for a unicode chart.. try googling "Unicode Codepoint Chart".

Yes I was concerned with the actual "looking like a list." Those codes sound like just the thing I was looking for. In the meantime, I have come up with something that will work for now, based on everyone's input. Thank you all so much for the help!

I've experimented with it, and I really like the way the unicode trick looks. I haven't had a chance to start redoing my own profile yet.. it's quite an undertaking, and I generally prefer to build stuff in SL than mess around with my profile.
Here's a bunch of the characters from the chart I use.. the first 288 in that block
I also use an old BASIC programming trick. Use the first character from each row. That way, if you ever need to insert a line inbetween, you can use from the second column, third, etc.
