I have taken part in a few hunts (just got addicted) but as a store owner I was wondering how you can get involved in a hunt. I usually only hear about them once they have started. Thank you.

First you need a pith helmet and a gun of some sort will help…
…seriously I don't know, but welcome to the forums.

Then you need a good tracking dog and a reflective vest.
(I hope someone can actually be helpful at some point!)

There is an in-world group (Gridwide Hunters? I can't remember exactly - it should show in groups in my profile if you can't find it in search) that seems to keep track of current and upcoming hunts. I don't know if it's exactly what you need, but it might be a good starting point.

Hunts are usually run by people other than the store owners. Find a hunt that you like that would be appropriate for your store and ask some of the participating store owners who you should contact to get included in the next one.

If your store is reasonably large (it doesn't have to be huge, just not tiny), you could always host your own. Multi-store hunts are overvalued. If I spend time going over every inch of your store looking for 10 items, I'm going to remember your store much better than if I spend 5 minutes there looking for one object before teleporting on to the next store. And I'll actually have time to see your vendor textures too.
I've got year-old items from huge gridwide hunts that I still haven't unpacked yet. On the other hand, I went to a single-store hunt last night (from Aniri's Boutique), and the first thing I did when I got home was unpack everything. Now I have a lovely new dress and they get their name in front of you -- because they were willing to stand on their own merits and not just be one more interchangeable store on a too-long hunt list.
