I was gifted some poseballs, things like holding hands walking/flying, and a couple of dances, and I also have a horse one that allows 2 riders on a horse, that I'd love to use more often.
My question is...is there a way I can use these if I can't rez any of them on some land ? - like a park that I'd like to wander through with my friend, or ride through, or in a club where I'd like to use the dances.

The problem is that poseballs by themselves do not move. You would have to put the poses in some kind of vehicle that you and your partner(s) sit on/in and ride.
That said, while you couldn't rez the resultant vehicle on the "no-build" parcels, you could rez them nearby on Linden protected land or another build-allowed parcel, then ride them into the park you mention. That is, unless the route and / or the park parcel itself is set to "no-object-entry", in which case it is just not going to be possible to do.
No-build and no-object-entry together are used to pretty much prevent rezzed objects on a parcel.

If you send an IM to the land/club owner and ask, politely, they may make it possible for you to use them. But, if they say no or just don't reply, then just move on. I have had a club owner allow me to rez a dance that they didn't have for my partner and me to use. When we went back the next time, the club had that dance in place so we didn't have to use ours
