when building in a sandbox......they have a set time period for removing extra prims..........do they do this everything at once or do they remove each build according to the time each has been there?

It depends on the sandbox.
Some return prims depending on when they were rezzed. You can check if this will happen by looking in "about land" to see if autoreturn has been set.
Some do a complete clean all at once, every x hours. Usually there's some sort of timer visible if this is the case, so you know if it's worth starting to build before the next clean. Some say they will do this, but then don't do it. I can only assume in that case it's when the sandbox owner gets round to doing it manually. If you're not sure, you could rez a prim you don't care about and see what happens to it.
Whichever system is in place it's a good idea to take regular backup copies of your builds.
