How do I see and edit my account information? More specifically my name, address, telephone number information. I know that I can go to the my account page from the main secondlife.com site but it doesn't have those things. I recall seeing it once before.

Unfortunatly it was never there. You have to submit a support ticket.
Don't worry if you don't know what to file it under, I didn't either but apologized for that in my ticket and they helped me anyway.

Go to the main SL webpage.
Click on My Account in the upper right
On the left, you'll see a long menu of choices
Click on the Update Billing Information choice

Yup, AFAIK, payment info can be changed but name, email can only be changed by talking to LL.

Email is changed through "contact info"
