When SL starts up, it automatically enters the name of the avatar who last used the app. This allows anyone with access to your Mac to find out the name(s) of your avatars. Is there any way to prevent this? (preferably without crippling yourself behind walls of encryption and logins).

I don't think there's a way to prevent it. The last login name is stored in settings.xml.
If you have admin rights on the Mac, you could create another Mac login and switch to it when playing SL.

After you log out of Sl, try to log in again with a fake name and password, the login wil fail and leave the fake name behind for all to see.
