How do I go about this? From what I can tell Shoutcast do not have a broadcasters platform for the Mac...

One word: NiceCast
Slightly longer explanation: NiceCast is great, rock solid broadcasting software that does Shoutcast, Icecast and even Live365 broadcasting. It does cost $40 but it's worth it for the effort it saves you compared to the freebies I've tried anyway. You can try it for ~20 min at a time before registering (after 20 min it sends bursts of white noise along w/ the stream). There are also a couple F/OSS servers that work on OSX and I believe there may be some of the same command line driven servers available on OSX as are on Linux. I'd still say pony up for NiceCast. (at least it's cheaper than SAM). _____________________

As a post script to this, I spent yesterday evening setting up NiceCast, and then setting up an IceCast streamer I had rented in-world.
NiceCast is great, easy to use, and the customer service I received from the chap I am renting a stream from was fantastic - Zuhan Tomcat ( I know we aren't supposed to name names, but he was so good and helpful!). He also has the only NiceCast streaming servers for hire on SL. Make sure you now how to open ports before you get started, or at least have the admin page for your router to hand. CLUB SCHOOL now teaches MAC users how to DJ using Nicecast. You will learn how to make a playlist, do a voice over, play sound effects, take requests and use a shoutcast server to broadcast music over the internet and into Second Life. Nicecast user here! Also ZT as mentioned above. I use iTunes out to an external mixer for voicovers and back in using a Griffin iMic USB device.
