The weather here is so erratic (75 degrees one day and 25 the next) that I have not had the urge to make soup. But a couple of weeks ago I made my stocks to freeze for the season and decided this morning to grab some chicken stock and try out a new recipe. It is simply but ended up wonderful so I thought, being bored and all, that I would share:
4 stalks celery (the tender ones in the middle are the best) chopped fine 2 medium carrots diced or julienned depending on how you want it to look 1 medium onion diced 2 tbsp olive oil and one pat of butter 3.5 cups chicken stock (if you use store bought it would be about 2 cans) 1/4 cup rice (long grain or basmati raw) 1 cup chopped apple 1 tbsp curry powder (I like the indian tumeric based yellow curry powder for this..madras is too hot) 1/8 tsp dried thyme (rub in your hands to release the oils a bit) 1/2 cup light cream 2 tbsp flour 1 cup cooked chicken chopped
heat fats in soup pot over medium high heat add diced veggies (carrots, onion, celery) cook about 5 min or until tender add curry, thyme, apples and rice stir to coat add stock bring to a boil and reduce heat to low cover and simmer 25 minutes in a seperate bowl stir cream and flour untill smooth stir flour cream mixture into soup pot untill blended bring back to boil over medium heat and stir untill thickened
Serve with a splach of apple brandy and a dollop of chutney and a peice of flat bread.

this looks delicious, and i'll use almost any excuse to put curry into something! One question, does the apple go in along witht the veggies, or later?

oops left that bit out didn't I...lol... The apples are added with the rice  . Keeps them from becoming soggy globs of pulp.
