Bbq?

All right I mentioned in another thread that my new apartment has only a small deck. In fact it is so small that any 'standard' sized propane grill will fill more or less the entire thing. While that is fine with me, the wife (Alek Wu) says no.

Anyways, I got a new b-day present I like so much I wanted to share. It is a weber baby-Q, and the meat under those pepers and onions is some celebratory filet mignon. And yes, it was good ... very good. My favorite method of cooking steak is to marinade it in a mix of sauces, generally spicy, lots of pepper and some cajun seasoning, with a good amount of peppers (bell, chili, etc) and onions. I bbq it as you see it here. And it is good. :D

So who else likes to BBQ? Any favorites or secrets?

I love BBQ! I live in Central Texas and BBQ is a passion around here. I dont make it for myself much because there is so much excellent BBQ around here its just easy to go get some somewhere.

My favorite place is about 30 miles from here, Kreuz Market. They dont have any BBQ sauce at all, cant have it even if you want it. Good BBQ does not need sauce anyway. Kreuz specialty is pork chops, most of them are nearly a pound (after cooked). I love Kreuz, lol.

You sound like you got the cooking down. If you want to try a good premade marinade, look for Stubbs. Im not sure how available it is, but if you cant get it locally, you can get it online. The sauce is okay, but they really excel in their marinades. I try to use it when I do cook for myself.

We have a family barbeque 4 or 5 times a year, 1' 3/4" prime sirloin (fat not trimmed off), rubbed with cajun seasoning.

My son Joaquin has the charcoal heat down to a science. Then we slice at an angle, yummy!

Served with baked potatos and corn on the cob. Desert is angel food cake with whipped cream and raspberries served with café de olla.

I've been down in the Dallas/Ft. Worth area for about a week now visiting. The other night we went out to a place called Rudy's. Cracked me up when we showed up. First of all, the place is built into a gas station. No plates either...they just set you up with some butcher paper and let you go to town. Once we sat down to eat though, I realized the true meaning of TX bbq....I think I could eat this stuff every night.

Rudy's is a chain down here, they popping up everywhere these days. They have pretty good bbq, but its really expensive. I think they sell it buy the 1/4 lb instead of by the full pound. I think last time I went to a Rudys, Pork Loin was $7.95 for a 1/4 lb, really outrageous price. They do a good job of serving up a good meal though.

If you make it down to Austin, let me know and we can go down to Kreuz. One a scale of 1 - 10, 10 being best, Kreuz Market is a 15, and Rudy's is about a 7.

Kreuz is really exceptional, they have had the same fire burning for over 100 years. When they moved to the new building, they shovelled the coals into a wheel barrel and had a parade down Main Street to the new place, it was a big deal, lol.

If your in the mood for more BBQ while in DFW, try a place called Sonny Bryan's. They do a good job. I only been to the original location on Inwood, but I see they have a lot of locations now.

I absolutely adore Stubbs! They have a great web site if you havn't been there. You can order the entire line on-line. Being from NC...I love BBQ not only are you allowed to eat with you fingers but you are expected to get messy.

The best tip I have for grillers and bbq'ers alike is don't move the meat hehe. I love it when on television you see the huge flames and the guy standing vigilantly over the grill sweating with his bbq tongs in hand flipping the meat over and over. Makes me look like a pro every time!

Congrats on your new baby-Q! How cute and convenient.

Ohh and for a true bbq experience check out your local bbq events and competitions...most states have them now and they usually have awesome food and local talent alike.

I hate you I hate you everyone...its lunch time here and OMG I want that stuff so bad....but I dont have time as the best eateries are about 30 mins away so...for me and an hour lunch Id never make it.

A lot of people in Lisbon used to use our traditional "barbecues" which are usually small, made of clay, or cast iron, but today its getting rare.
We only use real coal on them, however, not propane or anything. Its usually for grilling fish, like sardines and cod, though sometimes also pork.
A lot of people in the country have these ovens built into the outer walls where they bake bread and cook a variety of things.
For me, its usually microwaved leftovers :(

Okay, I'll enter the BBQ fray. I lived in Tuscaloosa, AL for a while (actually, for a while three times) and although the town was, well, not my favorite place in the world, they did have the BEST BBQ. Archibald's is THE place, but since you have to not only live there, but be pretty "in the know" since it's just a converted garage behind a small house in Northport, that doesn't do you all any good. But you can get the second best BBQ in the world from Dreamland:

My faves: bbq teriyaki salmon. :P

And since I saw it on a cooking show, one of these days I want to try beer-can-stuffed chicken. Take a can of beer, open it, stuff it inside a whole chicken, stand the whole thing upright on the grill, close the lid. The beer boils up and infuses the chicken with beery goodness. :D

A thought occurs to me though -- what happens to all the paint etc that's on the outside of the can? I don't think I want paint fumes getting into my food.

Maybe it would be better to find some kind of heat-proof metal container, fill *that* with beer and shove it up the chicken.

Here is a pic of a bbq a buddy of mine in east Texas built for himself. He has plenty of room, by the way. This grill is not much to look at, but it works awesomely. The bottom right is the firebox, middle is the grill and the top left is the smoker. A visit always results in a full day of eating :)

I don't think there is any "paint" on the cans, they are made of anodized aluminum and the "letters" are an integral part of the can?

I need to google that one, my late husband was in the aluminum business and the company he worked for in Puebla Mexico was the first to turn out an aluminum can there.

I *can* vouch for this recipe. I call it Uncle Pete's Molested Chickens. Great way to do it. You can either use 12ozers and cornish game hens, or get one of those big ass Fosters Oil Cans for a full size bird.

"Worst BBQ in Texas" lol. I never did get that slogan of Rudy's. It seems like a play on words with "wurst" but it just doesnt seem to work as a slogan. Taken literally, its better to eat anywhere else.

They have the dumbest TV commercials too. They show people (sexy women usually) drinking the sauce right from the bottle. They also show people putting it in their car gas tanks, I guess a pun with the attached gas stations.

They even spoof that old Coca Cola commercial where the little kid offers Mean Joe Green his Coke after a tough game and Mean Joe tosses him his jersey. Rudy's does the same commercial except the kid offers his bottle of Rudy's BBQ sauce to Nolan Ryan, local baseball hero.

Heh, this is interesting as one of the guys at work took a couple days off recently to work on eating at all the top 10 barbecue joints in Texas. I'll have to inquire about Kreuz.

Personally for DF/W bbq I prefer Dickey's over Sonny Bryan's, but Sonny's is good. :)

See, I'm thinking that as I have a week off I may have to run down and try some of that bbq you got there Loki, that's a damn fine picture you showed.

Mmmmm those are some awesome pics and ideas.

Texas definatly does have good BBQ. Had some awesome bbq brisket on baked potato last time I was there. Huge too. Yum.

If anyone is brave, a large BBQ restaurant in the town where I was born will ship nationwide.

King's BBQ

They serve shredded pork BBQ in a vinegar based sauce. You can also order other menu choices from their web site.
