Can SL display a wide field of view (greater than 97.2 degrees) without distorting the perspective? I'm running two monitors at 2048x768. That's 2.666 times as wide as it is high. If I try to set the field of view (using the debug menu) greater than 97.2 degrees, the perspective really looks distorted.

actually I have the same situation paulie =) To fix it, make SL run in a window, then you can stretch the window across both monitors. The only odd thing is that you avatar then ends up in the gap between screens. I didn't like it so I went back to single, but that's the easiest way =)

I have two 22 inch screens. I stretch the window all the way across one, and two-thirds of the way across the other. That way my avatar locates to the side of one screen, but I can see it and the center. I use the half screen for chat panels, etc. Works good for me, but it took a couple days to get used to.

I have just one 57" HD screen. It works just fine at the 16x9 ratio - 1.78. If you want to try using the fullscreen mode, in preferences, try setting the ratio to 2.0. I'm not sure if that'll work, but the option is there. If your dual-screens resolution is listed above that ratio, then it'll do the math for you.

Of course, running in a window works too. Multi-mon gaming setups typically are best with odd numbers of mons for the center-screen reason.
