Mmmmmmmmmm, theres chocolate, and vanilla, and strawberry, and blueberry and you could toss on some pecans and. . . . . . . . :p

Well..cheese is a neccesity of life and the single most important factor in the survival of the human race. It is as important to us as air or water. It is one of the foundations and building blocks of life.

Pie, however, is the spice of life. The golden flakey crust that makes life bearable and inspires our hopes and dreams. It is creativity and spontanaity. The feeling-filled muse of life. Pie drives us to achievments beyond our wildest dreams.

So..I guess I'd have to go with cheese pie, since I can't stand to face the future without one or the other.

Especially for you...


Greek Cheese Pie
[a rich dish, brilliant for lunch at work served hot, or warm]

the dough :
-----------
3 cups all purpose flour
1 cup warm water
2 tbl spoons oil
1/2 spoon oregano
dash of salt

mix ingredients; knead for about 2-3 minutes; adding flour to until it
doesn't stick to the hands - separate into 3 equal parts

the filling :
------------

a couple of chopped green shallots (can replace with 1/3 white onion)
1/3 cup finely chopped parsley
2 cups feta cheese , crumbled
1/3 cup freshly grated romano cheese
1/2 cup whole milk or better still, half & half
3 eggs
salt, pepper, thyme


beat eggs;
mix all other ingredients; heat in pot until cheese starts melting;
allow to cool to room temperature; then mix in eggs

the assembly :
-------------
roll out the 3 dough balls- so that each one is a bit bigger than your
baking pan (i use 8x12 in.)- the amount of dough, for that size will
give you the right thickness

place the first layer on the greased pan, with ends hanging over the
pan rim - add half the filling

follow on with the second dough layer -add the rest of the filling

finish off with the last dough layer; fold the dough layers together

pluck a few holes, making sure you go through the second layer of
dough

bake for 3/4 hour at around 400F

enjoy, with a simple tomato and cucumber salad

Cheese and Potato Pie is the future

Cheese and Potato Pie
This potato pie will dress up any dinner, and makes a good side dish for hamburgers or roast chicken. It can be made ahead. To spice it up, add some Tabasco sauce.
Ingredients
2 lbs. all-purpose potatoes peeled and cut into 1/4 chunks
1 tsp. salt
2 Tbs. olive oil
1/4 cup dry breadcrumbs
4 scallions chopped
4-6 slices County Line® Monterey Jack Cheese roughly chopped
6 slices County Line® Cheddar or American Cheese roughly chopped
2 large eggs lightly beaten
1 tsp. chili powder
Instructions
Heat oven to 375°F. Place potatoes and 1/4 teaspoon salt in a large pot and add water to cover. Cover pot, bring to a boil and cook for about 20 minutes or until potatoes are tender. Drain and remove potatoes. While potatoes cook, grease a 9-inch pie plate with 1/2 tablespoon olive oil. Sprinkle with half of breadcrumbs to coat.

In same pot, combine 1 tablespoon oil and scallions. Cook over low heat until wilted, about 2 minutes. Remove pot from heat. Add potatoes and mash with a potato masher. Let cool 10 minutes. Add County Line® Monterey Jack Cheese and 1/2 of Cheddar or American, eggs, chili powder and remaining salt to potatoes. Stir to combine. Spoon half of potato mixture into prepared pie dish; spread evenly. Top with remaining County Line® Cheddar Cheese slices. Spoon on remaining potato mixture and spread to cover cheese. Sprinkle with remaining breadcrumbs and drizzle with remaining oil. Bake 40 to 45 minutes, or until lightly browned. Let stand 5 minutes before cutting into wedges.

Makes 8 servings.

Well, we have lots os cheesy pie goodness here...

I still wanna make it known that I like cheesecake.
However, I also like pizza and I'm quite happy to eat Kris's greek cheese pie or willow's cheesy potatoes.

of course, pork pies with stilton and pickle go well together (so long as you're not dieting)

I can't say OR... how about AND? Combine the best of all the worlds and compile it into one tasty, filling-yet-nutritious cause for celebrated bon appetit! :)

So yeah... cheese pie... er... pizza... whatever you call it in this timeline. :D
