I have a machine with two sound cards in it and I was curious if there's a setting to ensure that Second Life only uses one of them for it's sound output since right now it's sending output to both and that won't work for what I want to do.

The best solution is in your bios configuration: i suppose you have an onboard card you can disable it from there.
Also you can disable it form your OS.
You can find a lot of tutorials on internet about how to do it.
