They're not, only the client is displaying it, using the software already installed on your computer. The videos never see or transit thru the LL servers.

Stephane is correct, but let me add a little history to the mix, and maybe you'll understand why Quicktime is the media player used with SL. The phrase "with all the choices they had" is not really applicable. Let me explain.
We got video in SL for one reason, and one reason only. One of the programmers LL hired a while back had formerly worked as a Qucktime developer. To let him get his feet wet learning the SL code, they made the wise decision to have him start with what he already knew, which just happened to be Quicktime. His first assignment was to create bridge between SL and Quicktime, which allowed him to connect what he already knew with what he needed to learn, and gave us the added benefit of bringing video into SL. Had that person never been hired, we likely wouldn't have video. It was just a lucky coincidence. Now that that's out of the way, keep in mind what you're actually seeing when you play a video in SL. Quciktime is the program actually playing it, not the SL client. 3rd party servers are the ones streaming it, not the SL servers. All that's happening is the SL client has a little utility in it which effectively stops the quicktime player from being visible on your screen and then maps the movie onto a texture in your SL viewer. Beyond that, Quicktime and SL are completely independant, and completely ignorant of eachother. In other words, Quciktime doesn't lag SL any more than any other comparably sized program you might have running in background would. It uses a little bit of processor power, a little bit of RAM, and a little bit of bandwidth. That's it. _____________________

I have a better insight into why things are the way they are. Thanxies for that fun romp through history, Chosen.
The way I see it... video's still very much in babystepping in SL, and there's a lot that could be added to it for functionality, even on a basic level. One of these, of course, is a progress bar to show when a video is loading, or some sort of greater visual feedback. I have no doubt there will eventually be such advancements; it just isn't there yet. And as Chosen mentioned and as I'll emphasize, a definitive word is "bridge".  _____________________
